This favorite vine is at home all over the world.
But in the best vineyards of the municipality of Appiano such extraordinary grapes are produced,
to give life to a fine wine, with exorbitant yet elegant strength.
Since 1986 this Chardonnay belongs to the Sanct Valentin top line and represents one
of the most important wines of the cellar.
Perfect balance, rightly blended acidity and excellent aging potential.

Cultivation form: Guyot

Harvest: late September to early October; manual harvesting and selection of grapes.
Winemaking:
alcoholic and malolactic fermentation and aging on the yeasts in barriquetonneau.
Assembly after almost a year and further maturation of at least
8 months in concrete barrels.

Pairing tips:
It goes very well with strong recipes such as "mixed fried" fish,
ravioli with porcini mushrooms, risotto with “Graukäse”.
