Winemaking
Manual harvest in the first ten days of October, fermentation at a controlled temperature in stainless steel tanks,
malolactic fermentation in vitrified reinforced concrete tanks,
refinement on the lysis for approximately 5/6 months in vitrified reinforced concrete tanks
and for a separate portion in second passage French oak.
Pairings
First courses with meat sauces – exceptional with pappardelle with hare sauce.
Also excellent with roasted meats such as pork loin or roast kid.

The cultivation of Teroldego, an indigenous vine and symbolic wine of Trentino, has very ancient origins.
This variety with its incredible polyphenolic richness finds its perfect home along the gentle slopes of the Avisiane Hills,
where excellent grapes ripen which forge the most typical and characteristic Teroldego.
The unmistakable intense ruby red color is a prelude to the olfactory richness.
The characteristic violet scent subsequently evolves into notes of plum and small wild berries.
On the palate it expresses itself with a soft and round body, with a particularly deep finish.
